The high gluten and protein content ensures a high sugars and fats absorption and retainment in all processing stages and the development of a very strong and stable gluten mesh that allows a consistent and generous expansion during the cooking process.
Ideal flour for “grandi lievitati”: panettone, pandoro, colomba and babà.
